boring week...

well, i've taken NO pictures since last sunday at the golf course. i'm terrible. i know. this week was extremely uneventful. monday my mom came over to babysit while i ran to monroe for a dentist appt. tuesday i took olivia to rett's softball game (she did great! slept the whole time!) wednesday and thursday we didn't leave the house. rett's dad came friday afternoon and spent the night on his way to colorado. so, since the week was so boring i have no pics. but, last night i tried a new recipe from kelly's korner recipe blog (http://kellyskornerrecipes.blogspot.com/) . it was soooo good! and SUPER easy! my kind of meal. paired with a salad and garlic bread...it was yummy!

Lemon Chicken with Green Beans and new potatos



This is our dinner at least two nights a week. I got the recipe from Jennie several months ago and I just love it. It's easy and fairly healthy. We are having it tonight. Yum!
6 tablespoons olive oil

2 lemons, 1 thinly sliced, 1 juiced

4 cloves garlic

1 teaspoon salt
1/2 teaspoon ground pepper
3/4 lb green beans
8 small red potatoes, quartered
4 chicken breasts

Preheat oven to 450. Coat a large baking dish with 1 tablespoon olive oil. Arrange lemon slices from 1 lemon in a single layer on the bottom of the dish. In large bowl combine remaining olive oil, lemon juice of 2nd lemon, garlic, salt and pepper. Add green beans and toss to coat. Using tongs, remove green beans and arrange them on top of lemon slices. Add potatoes to same olive oil mixture and coat. Arrange on inside edge of dish on top of the beans. (I think it’s so pretty!) I also add a lemon pepper mixture on top of everything. It adds a lot of flavor.Place chicken in olive oil mixture and coat. Place chicken in dish. Roast for 40-50 minutes. Remove chicken and continue roasting potatoes/beans if necessary.
I use canned cut green beans because I love canned beans. Put I'm sure fresh or frozen would be just as good!

i can't believe she'll be a month old on monday!

  1. Oliva is adorable..I do remember you...yea when I talked to Joanna she told me that you and I had the same due date. I ended up delivering him almost 3 weeks early at 7 lb 6.9 oz, if he had stayed in any longer he would have never made it out! Hope all is well with y'all!
